School nutrition teams manage complex, high-volume operations every day and know their students and communities best.
When a school wants to transition toward more scratch cooking, A Longer Table brings the culinary and operational expertise to help make that shift practical and sustainable.
The school runs the cafeteria. We work alongside its team to put the Next Course Cafeterias model in place.
We begin by understanding the cafeteria today, including staffing, equipment, menus, purchasing, production, and meal service.
Every school has a different starting point, but the core model remains the same.
We work with cafeteria staff to build the skills and systems needed for scratch cooking at school scale.
That includes:
By launch, staff are prepared to put the new menu and systems into practice.
A Longer Table works alongside cafeteria staff as the new approach moves into daily service.
We provide hands-on coaching, troubleshoot production challenges, and help new routines become established.
Students are part of the process, too. Ongoing feedback help shape nutritious menus around what they enjoy eating.
As staff gain experience and the new systems become routine, A Longer Table’s hands-on role becomes less intensive.
The school continues operating its cafeteria with the skills, procedures, and tools needed to sustain the work.
The knowledge and systems stay with the school.
If your school or network is exploring a transition to scratch cooking, we’d love to talk.
Thank you to these funders, and many more, for making this work possible.
