A Longer Table strengthens school cafeterias so children are nourished and prepared to learn by building the workforce and systems to support scratch cooking.

Picture this: You’re in a school cafeteria at lunchtime.

The smell of scratch-cooked food fills the air. Students laugh and chat as they line up for their favorite dish prepared by someone they know behind the cook line. The salad bar overflows with fresh, colorful veggies. Staff are equally excited to purchase a meal at school, because they love the food too: The room feels alive.
This is Next Course Cafeterias in action.

At A Longer Table, we believe school meals are one of the most powerful tools for supporting student health, focus, and connection.

We help schools bring in fresh ingredients, staff training, and systems that work for the whole school community.

The results? Together with school partners, we see more students eating lunch, food service teams proud of their work, and kitchens that become hubs of care and collaboration.

With half of a child’s daily calories coming from school meals, every student should have access to food that’s both nourishing and appealing: a goal shared by parents, students and school leaders across the country. Fresh, nutrient-dense options and real choice at mealtime help make that possible. Next Course Cafeterias partners with schools to bring these options to life.

How does it work?

We know school cafeterias in the US serve more meals in a day than the most popular restaurants in the country combined, creating a powerful opportunity to support kids’ health and learning. All schools operate within tight budgets, limited staffing, and complex supply chains, so we team up with them to maximize these resources to ensure every student gets fresh, nourishing meals they’ll enjoy.

Next Course Cafeterias partners closely with schools to:

  • Assess their current food service program
  • Support schools to update their kitchens to serve fresh options
  • Train on culinary techniques, kitchen operations, and service excellence
  • Develop menus that meet nutritional guidelines set by the USDA National School Lunch Program

Students will walk into their cafeterias, eat a free meal, and have the option to choose between multiple options: salads, sandwiches or hot entrees. And they will be able to add freshly prepared fruits and veggies to accompany their meal every single day.

Listening to students about what’s on the menu

Working alongside school teams, we invite students to share what they want to eat before crafting the menu. They provide ongoing feedback about the flavors, options, and new items they’d like to see on their school menu.

When students have a voice in what’s served at school, participation goes up. Partnering with third party evaluators, we’ve seen steady gains in meal participation, along with positive trends in academic performance and attendance at Next Course Cafeteria schools.

This approach allows us to consistently expose youth to new types of foods, expanding their palate and influencing lifelong interest in trying new foods and making choices that fit their needs.

Next Course Cafeteria’s mission doesn’t stop at the plate: the impact goes beyond, into classrooms and communities. Creating a supportive environment where students can focus, learn, and grow.
